For Las Vegas native Nicholas Orth, food has always been about more than what's on the plate—it's about family, hospitality, and creating an experience that makes people feel at home.

Nicholas developed his love for the food and hospitality industry at an early age. Over the years, he has had the special opportunity to work alongside both his mother and his daughter, who are also in the industry. A devoted family man and proud father of three, Nicholas enjoys spending time with his family and being outdoors.

For 19 years, Nicholas has served as Executive Chef of the iconic Peppermill Restaurant & Fireside Lounge, bringing his passion for classic hospitality and comforting food to a Las Vegas institution.

His cooking philosophy centers around homestyle comfort food with a thoughtful, modern approach. He believes healthier choices shouldn't sacrifice flavor, incorporating quality oils, fresh ingredients, more produce, reduced unnecessary fats, and lighter preparation techniques while preserving the familiar flavors guests love. His goal is to create the warmth and familiarity of a home-cooked family meal—food that feels welcoming, nostalgic, and memorable.

That sense of family extends beyond the kitchen. Nicholas believes employees are essential to the entire guest experience and wants the Peppermill to be a place where people genuinely enjoy coming to work. He strives to create an environment where employees feel valued, supported, and part of a family working toward the same goal: taking exceptional care of every guest.

His leadership has been part of an exciting era that includes the James Beard Foundation's America's Classics Award in 2024, Las Vegas Hall of Fame Magazine recognition in 2025, and The 64's Best Local Restaurant in Las Vegas in 2026. Nicholas has also prepared food for CBS Network's televised Super Bowl coverage.
