Alessandro Capuano, Chef

Alessandro Capuano joins Carbone at ARIA Resort & Casino as Executive Chef, bringing a diverse culinary background rooted in his Italian heritage and experience across both the restaurant and food industries.

Born and raised in Naples, Italy, Alessandro graduated from the Università degli Studi di Napoli with a degree in Finance while simultaneously pursuing his passion for the culinary arts. His career later brought him to New York, where he worked with Tarallucci e Vino before opening an authentic Italian pasta truck.

Alessandro went on to serve as Corporate Chef and Brand Ambassador for Pastificio Garofalo, one of Italy's historic pasta producers. His career eventually brought him to Las Vegas, where he continued developing his culinary experience before returning to Garofalo.

Most recently, Alessandro served as Culinary Director with FEG for Bill Foley before joining the team at Carbone.

Throughout his career, Alessandro has combined his Neapolitan roots, knowledge of Italian cuisine, and experience in both restaurants and culinary brand development. He looks forward to bringing that background and perspective to Carbone and the ARIA culinary team.
