Eitan grew up in Ann Arbor, Michigan. With family roots in South America, frequent travels throughout the continent sparked an early appreciation for food, culture, and hospitality. He went on to study Hospitality Business at Michigan State University, where two introductory wine courses sparked a passion that would shape his career.

After graduating, Eitan bought a one-way ticket to Seattle, beginning a four-year journey across the West Coast that included time in Seattle, Napa Valley, and San Francisco. When the pandemic brought him back to Michigan, he found a summer job on Nantucket at Wine Spectator Grand Award-winning Topper's at The Wauwinet. While the endless sunshine and beach days were appealing, he knew that it was now or never to try to chase his ambitions in New York.

In New York, Eitan refined his craft at some of the city's most acclaimed wine programs, including Le Coucou and SAGA, before stepping into beverage leadership roles. Today, he is part of the opening team at Kabawa, where he oversees a beverage program focused on curiosity, hospitality, and showcasing exceptional growers from around the world.
Outside of work, Eitan enjoys practicing yoga, playing Ultimate Frisbee, and exploring New York City's ever-evolving food and beverage scene.
