Originally from Orizaba, Veracruz, Eli discovered her passion for literature, art, and gastronomy at a young age. With over 25 years of experience in the hospitality industry, she has established herself as a leading figure in Mexico's thriving bar scene. She played a key role in its evolution, serving as Head Bartender at Grupo Pata Negra before joining Pujol, where she led the beverage program for five years.

Beyond mixology, she is a passionate advocate for agave culture, leading tastings, seminars, and fostering collaborations between academia and the spirits industry. Her dedication earned her the Bartender of the Year award from Culinaria Mexicana in 2023. That same year, Martínez was given the Key to the City of her hometown, Orizaba. In April 2025, Eli was awarded by her peers as "Best Bartender in North America" by The World's 50 Best Bars.

As a former co-founder of Tlecan, a bar dedicated to celebrating agave spirits and Mexican heritage, she helped shape one of the most influential mezcalerias in the world. In 2024, Tlecan made history as the first mezcaleria ever recognized by The World's 50 Best Bars, ranking on the top 10 bars in North America and among the top 20 bars worldwide.

A highly respected consultant, Eli has crafted over 50 beverage programs for top bars and restaurants across the globe, shaping the way agave spirits are presented and experienced.
