Chef Mariana Alvarado-Garcia is a Mexico City—born chef, culinary entrepreneur, and advocate for the enduring traditions of Mexican cuisine. Raised with a deep appreciation for the foodways of her homeland, she brings together heritage, technique, and hospitality in work that celebrates the richness and versatility of masa.

In Las Vegas, Mariana launched her tortilla company MasAzul, where her approach to traditional Mexican cooking and heirloom corn earned wide attention at farmers markets, pop-ups, and beyond, including an appearance on Food Network's Big Restaurant Bet and a feature in Netflix's Taco Chronicles. She also consulted at Casa Don Juan, a family-run downtown institution known for its from-scratch, home-style Mexican cooking and vibrant, art-filled dining room.

Mariana brought her culinary leadership and operational expertise to Istorya's Isang Kusina chapter, helping expo the line and guide service for our seven featured chefs. She is now launching Mesa Club, a new supper-club concept centered on intimate gatherings, generous hospitality, and the shared experience of the table.

As co-lead chef for Istorya's Acapulco series, Mariana will bring her Mexico City roots, masa-driven perspective, and passion for communal dining to a menu and experience shaped by historical insights from our culinary research team.
