Chef Jae Doan is the Executive Chef and Co-Founder of Doanburi, a modern Japanese restaurant in Las Vegas dedicated to combining exceptional ingredients, refined technique, and genuine hospitality.
Born in Vietnam, Chef Jae moved to Las Vegas in 2002 and discovered her passion for Japanese cuisine through years of dedication and hands-on experience. She trained in some of the city's most respected kitchens, including acclaimed restaurants at Wynn Las Vegas and MGM Resorts, where she refined her sushi craftsmanship and developed a meticulous attention to detail. Along the way, she became one of the few female sushi chefs working on the Las Vegas Strip, earning the respect of peers and guests alike for her precision, creativity, and consistency.
In 2025, Chef Jae and her business partner, Katie Ray, opened Doanburi after spending more than two years building a loyal following through takeout and delivery. Their vision was to create a neighborhood restaurant that delivers the quality and execution of the Las Vegas Strip while remaining warm, approachable, and community-focused.
Chef Jae's culinary philosophy centers on respecting traditional Japanese techniques while embracing thoughtful innovation. She is known for sourcing premium seafood from around the world and creating dishes that allow exceptional ingredients to speak for themselves.
